BIO OLIVE OIL – DEMETER
Olival da Risca SELECTION "Original" Virgin Extra, BIO, DEMETER, with its complex, fruity, and aromatic flavor paired with medium bitterness and spiciness, is the perfect olive oil for everyday use in the kitchen of every olive oil lover.
The olive oils from Olival da Risca are exclusively “extra virgin” – each one a premium organic olive oil of Demeter quality. As untreated natural products of the highest quality, these olive oils are produced with the greatest care from optimally ripened olives. The olives are milled immediately after harvest in the estate’s own mill and then undergo a gentle cold extraction process. This method preserves all the valuable nutrients of the olives, resulting in outstanding olive oils with an intense green to golden-yellow color, fruity taste, and distinctive aroma.
TASTE
Aromatic and fruity, elegant yet robust. The fine bitterness is strong, and the piquant spiciness is distinctly pronounced.
CULTIVATION / PROCESSING
On an area of 170 hectares, more than 35,000 olive trees grow on the farm, some of which are up to 800 years old. Only Portuguese olive varieties are cultivated in the groves, including Cobrançosa, Galega Vulgar, Cordovil, Galega Grada de Serpa, Gamenha, Verdeal, Carrasquenha, and Mançanilha. On the remaining 50 hectares of the farm, citrus fruits, herbs, and spices are also grown in certified Demeter organic quality.
During harvest, state-of-the-art machinery is used to handle the trees and olives with the utmost care. The mill is located directly on the estate, ensuring that the freshly harvested Demeter olives have an extremely short transport route before processing. The milling takes place within less than four hours after harvesting.
