The rough leaves of lemon verbena (Aloysia triphylla) — also known as Bela-Luísa or Doce-Lima — are so rich in essential oils that even a gentle touch releases a cloud of intense citrus aroma that could make even true citrus plants blush with envy.
But the light green, narrow leaves not only smell wonderful — as a tea, they taste delightfully refreshing, and as a seasoning, they enhance and refine salads, sauces, and many other dishes.
When used in confectionery, the intense and sweet flavor helps significantly reduce the amount of sugar in recipes. The dried leaves should be crushed with sugar to release their oils. They are used in fruit desserts, cakes, cookies, and ice cream.
